Neversink Spirits is an exciting project conceived and executed by Yoni Rabino and Noah Braunstein in Port Chester, NY. Inspired by the world’s finest apple eau-de-vie producers in France, Austria, and the US, these talented young distillers have created a one-of-a-kind bourbon made from a mash of New York-grown corn (60%), winter wheat (20%), and malted barley (20%). The grains are milled on site at the distillery and then mashed and fermented in stainless steel. The mash is twice-distilled in a pot still to create a flavorful, grain-forward spirit.
