Four-Beef Clover: St. Patrick's Day Eats
Last year around this time, St. Patrick’s Day didn’t get much shine except as the first event of 2020 to be cancelled thanks to the burgeoning pandemic. This year, with vaccinations on the rise and New York opening back up bit by bit, we think it’s high time to raise a proverbial glass to this yearly celebration of Irish heritage. (Not a glass of Guinness, no—that’s a bit far flung for our usual selection of local brews by small makers—though Wine & Spirits certainly has Irish whiskeys worth toasting.)
Our butchers have been hustling with St. Patrick’s Day, Easter and Passover all on the horizon! We’ve made sure to have enough brisket for all, so you’ll have time to let your corned beef do its thing. We suggest this classic, straightforward recipe from NYT Cooking; our Provisions Pantry Pickling Spice is exactly as much as you’ll need. Thanks to our brisket being sourced from Slope Farm in Meredith, NY—our forever choice for beef, where grass-fed cows are free to roam the hills of upstate NY—there’s no need for more complicated recipes. The higher the quality of meat, the more flavor is naturally imbued.
If you’re not ready to tackle corned beef in your own kitchen, though, we get it. We’re all cutting it a bit close, and sometimes we just want to get good food on the table. Our butchers are taking care of that, too! Starting Friday, March 12th, you’ll be able to purchase corned beef prepared by our butchers—all that’s left to do is cook it. Don’t forget the horseradish sauce!
