This Amontillado is a prized style of sherry that first undergoes ten years of biological aging under a film of flor yeast, before another five years of oxidative aging. This results in an incredibly complex wine that combines some of the fresh, cuttingly saline characteristics of a fino with the rich, nutty qualities of an oloroso. Expect smoky walnuts, dried flowers, dates, earthy celery root, salted caramel & sandalwood.
