VEA EVOO Early Harvest oil is produced from the 100% Arbequina olives used in the classic Veá olive oil. What makes it unique is that this is the very first oil that comes out of the mill at the beginning of the harvest when the olives are very green and pungent. This oil is only pressed during the first 5 days of the harvest and in limited quantities. This oil is left unfiltered to capture the true expression of early harvest olive oil. The result is a beautiful green and fruity oil, fragrant from the young olives with the same distinctively nutty flavor and buttery texture of the rest of Veá ’s oils. This oil has a little pepper at the finish and a distinct green tomato aroma and flavor. is made from Arbequina olives picked in early November. Drizzle over soup, roasted poultry, fish, and excellent for dipping fresh, warm bread, to let the fresh flavor be featured.
