Sommelier turned winemaker Rajat Parr aims to show off the potential of Pinot Noir while expressing the characteristics that make Santa Barbara County unique in this small production wine. The grapes undergo whole cluster fermentation then mature in neutral barrels and concrete vessels to focus on the fruit’s freshness and vibrancy. The wine’s complexity stems from minimal time in French oak barrels, no filtration, no added sugar, acid, and enzymes. The result is a glass filled with aromas of fresh raspberry and hints of cola and tobacco and flavors of more red berries and fresh violets.
