In 1790 the first vines were planted on the estate that is now home to Parés Baltà winery. Centuries later, in 1978, Joan Cusiné Hill took over the winery, the scion of a vine growing family in Penedès. Today, the estate is managed by Hill’s grandsons, Joan and Josep Cusiné Carol, alongside their wives Maria Elena Jimenez and Marta Casas, who together manage the winemaking and viticulture for the winery with an eye toward innovation and quality. This pearlescent, natural and unique Xarel·lo is a great example, fermented in amphorae specially made using clay from the estate. Aromas of delicate white fruit and toasted almond entice the nose and palate, balanced by refined structure, and ending in a long, complex finish. An excellent partner for rice and fish.
