With its subtle and sophisticated taste, Le Gruye`re AOP is very popular all around the world. Produced since at least 1115 in the region surrounding the small town of Gruye`re, it is still made today in village cheese dairies according to the traditional recipe. World champion cheesemaker Michael Spycher produces this Gruyere using milk sourced from within 4 kilometers of his facility. The cows graze on succulent flowering meadows and produce nutritious milk of pristine quality. Aged for a minimum of 18 months, this Gruyere Reserve has a creamy bite and complex fruity and nutty flavors. You may even encounter some of those beloved crunchy tyrosine crystals!
