Cappelletti is more thann just an alternative to Aperol! In fact, while it may be less familiar to an American audience, this aperitivo has a long history in northern-Italy. Slightly spicier and less orange-peel focused than Aperol, Cappelletti also continues to derive it's coor from cochinal, a traditional alpine food dye derived from crushed beetle shells. So vegans should avoid.
