Axel Pauly is something of a hidden gem in Germany, focusing on sustainable farming, stunning quality and pure expressions of terroir. His cellars are in Lieser, the next village up from Bernkastel along the Mosel River. This single-vineyard Riesling, farmed on steep, slate-rich slopes above this tiny town, is hand-harvested from 80-year-old vines and fermented using indigenous yeasts, which aid in it's crystalline, pure expression. Mineral-driven and with bursting notes of lime, white peach, apricot, coupled with lengthy finish a very subtle sweetness make this a great addition to any dinner table.
